Pita Bread is a round, flat bread of Mediterranean / Middle East descent.  It should to be heated prior to serving to increase it's elasticity and re-open up the pocket.  The pocket is created during the baking process by the combined action of water turning to steam and the activiation of the yeast which pushes the top and bottom sections of the dough apart... This little pocket can hide a multitude of ingredients...
